Escalivada

Escalivada is a traditional dish from Catalonia, Valencia, Murcia and Aragón of smoky grilled or roasted vegetables. It typically consists of roasted eggplant, bell peppers and onions, minced garlic, olive oil and salt. One of the practices is to steep the vegetables in olive oil for hours before serving.
