Monte Enebro

This extraordinary handmade soft-ripened goat’s milk cheese is made in the Sierra del Gredos mountains of Avila, near Madrid. The current cheesemaker Paloma took over the operation of Queserias del Tietar from their father, the legendary  Rafael Baez, who began this as a labor of love. Lactic towards the center, the paste becomes more intense and piquant towards the rind, which is injected with P. roqueforti, not unlike a blue. Monte Enebro has won numerous awards; It is one of the most reputed cheeses from Spain.
